  • 14 oz canned artichoke hearts, drained and coarsely chopped
  • 15 oz whole milk ricotta cheese
  • 1 large Gustoli Farm Egg
  • ½ cup grated Parmigiano-Reggiano, plus more for topping
  • ¼ tsp freshly grated nutmeg
  • Salt and freshly ground black pepper, to taste
  • 12 sheets Colavita Lasagne (oven-ready recommended)
  • 4 cups Colavita Marinara Sauce
  • 4 cups (about 1 lb) shredded low-moisture mozzarella cheese

The Preparation

  1. **Prepare the Spinach-Artichoke Filling:** Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until softened, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant. Add the roughly chopped spinach, a handful at a time, and cook until it has wilted completely. Stir in the drained and chopped artichoke hearts. Remove from heat and let cool slightly.
  2. In a large bowl, combine the ricotta cheese, large egg, ½ cup Parmigiano-Reggiano, nutmeg, and a generous pinch of salt and black pepper. Stir in the cooled spinach and artichoke mixture until well combined. This is your luscious filling.

  5. Evenly spread half of the spinach-artichoke filling over the pasta sheets. Top with about 1½ cups of shredded mozzarella cheese, then ladle another cup of marinara sauce over the mozzarella.
  6. Repeat the layering: another layer of lasagne sheets, the remaining spinach-artichoke filling, 1½ cups of mozzarella, and another cup of marinara.
  7. Finish with a final layer of lasagne sheets, the remaining 1 cup of marinara sauce, and the last 1 cup of mozzarella cheese. Sprinkle generously with additional Parmigiano-Reggiano if desired.
  8. **Bake:** Cover the baking dish tightly with aluminum foil. Bake for 25 minutes. Remove the foil and continue baking for another 20-25 minutes, or until the top is golden brown and the cheese is bubbly and melted.
