Ingredients

  • 3 cups grape tomatoes (red and yellow)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 1 medium zucchini, sliced vertically, then crosswise into 1/2″ pieces
  • 1 medium yellow squash, sliced vertically, then crosswise into 1/2″ pieces
  • 1 small red onion, cut into 1″ chunks
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon fennel seed
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 3 tablespoons olive oil
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 pound Italian sausages, casings removed and cut into 1″ chunks
  • 1 pound corkscrew pasta, cooked to al dente
  • 1/2 cup Kalamata olives, seeded and halved or quartered
  • 2 tablespoons capers, rinsed and drained
  • 1 tablespoon red wine vinegar
  • 2 tablespoons freshly chopped parsley
  • 2 tablespoons freshly chopped basil

The Preparation

  1. Preheat your oven to 400°F (200°C). Prepare all vegetables: halve the grape tomatoes, dice the bell peppers, slice the zucchini and yellow squash, and chunk the red onion. Mince the garlic cloves. Remove casings from Italian sausages and cut them into 1-inch pieces.
  2. In a large roasting pan (or two smaller ones to avoid overcrowding), combine the prepared grape tomatoes, bell peppers, zucchini, yellow squash, red onion, and minced garlic. Drizzle generously with 2 tablespoons of olive oil, then sprinkle with dried basil, fennel seed, dried oregano, red pepper flakes, kosher salt, and black pepper. Toss well to ensure all vegetables are evenly coated.
  3. Roast the vegetables in the preheated oven for 20 minutes, stirring once halfway through. This initial roast helps them soften and begin to caramelize.
  4. After 20 minutes, remove the pan from the oven. Add the cut Italian sausage pieces to the pan, distributing them evenly among the vegetables. Return to the oven and continue roasting for another 15-20 minutes, or until the sausage is cooked through and lightly browned, and the vegetables are tender with slightly charred edges.
  5. While the vegetables and sausage are roasting, cook the corkscrew pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
  6. In a large serving bowl or back into the clean pasta pot, combine the roasted vegetables and sausage mixture with the drained pasta. Add the Kalamata olives, capers, and red wine vinegar. Toss gently to combine all ingredients, adding a splash of the reserved pasta water if needed to create a light sauce consistency.
  7. Stir in the freshly chopped parsley and basil. Serve immediately, garnished with an extra sprinkle of fresh herbs if desired. Enjoy this hearty and wholesome Italian feast!

Expert Tips for Best Results

Texture

Roast vegetables at a high temperature to achieve beautiful caramelization and a tender-crisp texture. Avoid overcrowding the pan, as this can steam the vegetables instead of roasting them, leading to a soggy result.

Aroma

A splash of quality red wine vinegar at the end brightens all the flavors, cutting through the richness of the sausage and roasted vegetables for a balanced, vibrant finish. For an extra layer of umami, consider a sprinkle of aged Pecorino Romano.

Preservation

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. When reheating, gently warm on the stovetop with a splash of water or broth to maintain moisture and prevent the pasta from drying out.
