How to Make Mediterranean Tuna Linguine

Follow our authentic Italian technique for perfect results

Ingredients

  • ½ bunches Italian Flat Leaf Parsley, minced
  • 2-3 Cloves of garlic – pressed, grated or minced
  • 3-4 Anchovy filets (packed in oil or dry packed)
  • 2 x 5 ounces Cans Genova Tuna, packed in olive oil, drained (reserve oil for another use if desired)
  • Kosher salt and fresh ground pepper, to taste
  • 1 Lemon, juiced and zested*
  • 3-4 tablespoons Capers, rinsed
  • 1 pound Linguine, or long pasta of choice
  • ½ cups Reserved pasta water

The Preparation

  1. Begin by bringing a large pot of generously salted water to a rolling boil. Add the linguine and cook according to package directions until it is perfectly al dente, firm to the bite. Before draining, reserve about 1 cup of the starchy pasta water.
  2. While the pasta cooks, prepare your aromatic base. In a large skillet or sauté pan, combine the minced parsley, pressed garlic, and anchovy filets. If using dry-packed anchovies, add a tablespoon of olive oil from the tuna cans or fresh extra virgin olive oil.
  3. Heat the skillet over medium-low heat, gently cooking the garlic and anchovies. As the anchovies melt into the oil, they will create a deeply savory, umami-rich base. Cook for 2-3 minutes until fragrant, being careful not to burn the garlic.
  4. Add the drained tuna (reserving the oil for another use if preferred) and rinsed capers to the skillet. Gently flake the tuna with a fork and stir to combine all ingredients, allowing them to warm through for about 2 minutes.
  5. Drain the al dente linguine and immediately transfer it to the skillet with the tuna sauce. Add about ½ cup of the reserved pasta water and the fresh lemon juice and zest.
  6. Toss vigorously to emulsify the sauce, coating every strand of pasta beautifully. The starchy pasta water will help create a light, cohesive sauce. If the sauce seems too dry, add a splash more pasta water.
  7. Season with kosher salt and freshly ground black pepper to taste. Serve immediately, garnished with extra fresh parsley if desired. Enjoy this simple yet exquisite taste of the Italian coast!

Expert Tips for Best Results

Texture

Achieve perfect al dente pasta by tasting frequently. The slight bite provides a satisfying mouthfeel and prevents the dish from becoming mushy. Ensure your sauce is creamy, not watery, by tossing vigorously to emulsify with the pasta water.

Aroma

The anchovies are key for depth, not fishiness; they melt away, leaving a rich umami. For maximum brightness, add fresh lemon zest and juice right at the end, off the heat. This preserves their vibrant, aromatic oils.

Preservation

Store any leftover Tuna Linguine in an airtight container in the refrigerator for up to 2-3 days. Reheat gently on the stovetop with a splash of water or broth to loosen the sauce, or enjoy it chilled as a pasta salad.
