  • 5 large egg whites
  • Pinch of cream of tartar
  • 1 pound (4 sticks) unsalted butter, cut into tablespoons, chilled
  • 1 teaspoon pure vanilla extract

The Preparation

  1. In the bowl of a stand mixer, combine the egg whites and cream of tartar. Whisk on medium-low speed until foamy.
  2. In a small, heavy-bottomed saucepan, combine the sugar with ¼ cup of water. Heat over medium-high heat, stirring until the sugar dissolves. Stop stirring once it boils and insert a candy thermometer. Continue to cook until the syrup reaches 245°F (118°C).
  3. Once the syrup is nearing 235°F (113°C), increase the mixer speed to medium-high and whip the egg whites until soft, glossy peaks form.
  4. With the mixer still running on medium-high, slowly and carefully pour the hot sugar syrup in a thin, steady stream down the side of the bowl, avoiding the whisk. Continue to whip the meringue on high speed for 8-10 minutes, or until the meringue is very thick, glossy, and the bowl is completely cool to the touch. This is crucial for stability.
  5. Reduce the mixer speed to medium-low. Add the chilled, cubed butter one tablespoon at a time, allowing each piece to incorporate before adding the next. The mixture may look curdled or soupy – this is normal! Keep mixing.
  6. Increase the speed to medium-high and continue to beat until the buttercream comes together, becoming smooth, light, and fluffy (this can take 5-10 minutes).
