How to Make Italian Stuffed Chicken

Follow our authentic Italian technique for perfect results

Ingredients

  • 2 tbsp chopped olives or sundried tomatoes
  • 1 garlic clove, crushed
  • ½ tsp dried mixed herbs
  • 200g (7 oz) full-fat soft cheese
  • 4 plump boneless, skinless chicken breasts
  • 4 ripe tomatoes, sliced
  • Olive oil, for drizzling

The Preparation

  1. Preheat your oven to 200°C (400°F). Lightly grease an ovenproof dish.
  2. In a small bowl, combine the chopped olives or sundried tomatoes, crushed garlic, and dried mixed herbs with the soft cheese until well blended.
  3. Carefully butterfly each chicken breast: slice horizontally through the thickest part, being careful not to cut all the way through, so it opens like a book.
  4. Divide the cheese mixture evenly and spread it inside each butterflied chicken breast. Fold the chicken breasts back over to enclose the filling.
  5. Arrange the sliced tomatoes around and on top of the stuffed chicken breasts in the prepared dish. Drizzle generously with olive oil.
  6. Bake for 25-30 minutes, or until the chicken is cooked through and golden, and the tomatoes are tender and slightly caramelized. A meat thermometer inserted into the thickest part of the chicken should read 74°C (165°F).
  7. Remove from the oven and let rest for a few minutes before serving. Garnish with fresh herbs if desired.
